black bean, couscous, and citrus salad

Ingredients
2 15 oz cans black beans, drained and rinsed1/2 red onion, minced2 large grapefruits, segmented and chopped1 large red bell pepper, diced3 ears fresh corn, kernels chopped off1 cup uncooked couscous1 large avocado, diced1 small bunch cilantroDressing:juice of 3 limes2 tsp cumin3 T olive oil1/4 t kosher salt
Directions
Cook couscous per instructions on box. Place black beans, red onion , grapefruit, cilantro, bell pepper, avocado, and shucked corn kernels in a large bowl. Toss to combine.

In a small bowl, whisk together all dressing ingredients. Add cooled couscous to salad and pour over dressing. Toss well and serve.

Salad will keep in sealed plastic continer for up to 5 days.
