2 c. Brown Rice, cooked1/2 c. Egg Beaters8 Baby Carrots, chopped1 Celery Stalk, chopped1 Small Onion, chopped1/2 c. Frozen Peas1/2 c. Frozen Corn2 Tbsp. Light Soy SauceWater (as needed)
The 60 minute cooking time includes the 45 mins. needed to cook the brown rice.
In a wok, or large frying pan heated to medium heat, cook the egg beaters thoroughly. Remove from pan and set aside. Add the carrots, celery and onion. Cook over high heat (stir fry) adding as much water as needed until the vegetables are tender. Cut the egg beaters into chunks and add it to the vegetables, along with the peas and the corn. Add the rice and soy sauce and mix all the ingredients. Continue cooking just until heated through.
Yields 8 servings of 1/2 cup each.
