1 Package (16 oz) Potato Gnocchi1 Cup chopped onion (1 medium)1 tablespoon Olive Oil2 cloves of garlic, minced1 package (6-10 oz) fresh baby spinach1 can (15 1/2 oz White Beans (Cannellini/Kidney/Navy, etc)1 Can (14 1/2 oz) Reduced Sodium Diced Tomatoes1/2 tsp Black Pepper1/2 Cup Shredded Part-Skim Mozzarella Cheese4 Tablespoons Grated Parmesan Cheese1/2 Teaspoon Oregeno1/4 Teaspoon Rosemary1 Tablespoon Basil
In a large skillet, saute onion in olive oil until tender; add garlic & cook 1 minute longer. Add Gnocchi; cook & stir for 5 minutes or until golden brown. Stir in baby spinach & cook until spinach is wilted.
Add the white beans, tomatoes & spices; heat through. Sprinkle with cheeses. Cover & remove from heat. Let stand for 5 minutes or until cheese is melted.
Serving Size: Makes 6 One Cup Servings.
