Cilantro Lime Shrimp Slaw

3/4 of a small head of cabbage shredded (600gm)1/2 of a small head of purple cabbage shredded (200gm)1 carrot shredded2 1/2 limes1 lb of salad shrimp meat1/2 bunch of cilantro chopped1 inch piece of a seeded jalepeno pepper minced (more or less to desired hotness)2 Tbsp finely minced red onion1/2 cup sour cream2 tsp white wine vinegar2 cloves of garlic mincedSalt & pepper to taste
In a medium sized bowl place shrimp and squeeze 1 lime on and mix. Place in fridge while you prep the salad.
Wisk together remaining limes juice, sour cream, garlic, jalepeno, 1/2 of the cilantro, vinegar, salt & pepper. Set aside.
In a large bowl add cabbage, shredded carrot & onion. Mix then add shrimp then dressing. Once combined you can either top with remaining cilantro or mix in.
Chill for a few hours before serving.
