Mushroom Veggie Burger

3 Tbl olive oil1 1/2 lb mushrooms, roughly chopped (combination of crimini, shiitake and Portabello)1/2 cup finely chopped onion6 cloves minced garlic2/3 cup rolled oats1/3 cup shredded parmesan3/4 cup breadcrumbs2 eggs, beaten1 Tbl chopped fresh parsley or 1 tsp dried parsley flakes1 tsp dried oregano1/2 tsp salt1/4 tsp black pepper
Heat 1 Tbl oil in large saute pan. Saute the mushrooms, onions and garlic over medium heat for about 10 minutes, or until the liquid cooks off, and the mushrooms begin to saute.
In large bowl, add mushroom mixture to oats, parmesan, breadcrumbs, eggs, parsley, oregano, salt and pepper. Mix well. Allow to sit for 15 minutes to develop the flavors. Shape into patties. heat 2 Tbl oil in large non-stick skillet, over medium heat. Fry patties, cooking about 5 minutes on each side, or until golden brown.
Serving Size: Makes 4 large or 6 smaller burgers
