Salmon Apple Feta Salad

Ingredients
1 Alaskan Salmon fillet (4 oz.)2 cups fresh baby spinach1/4 cup feta cheese1 golden delicious apple (diced)1 tbsp Italian fat-free dressing2 tbsp croutons (if desired)
Directions
Defrost salmon and grill over stove top using olive oil. Season with sea salt if needed. While grilling begin to dice apple into desired size and set aside. Place fresh spinach on plate and mix in Italian dressing (or desired flavor) evenly with the spinach leaves. Add feta cheese and apple pieces. Remove salmon from stove and let cool for 2 minutes. Place seasoned salmon over spinach. Add croutons to salad if desired.

Enjoy salmon apple feta salad with a freshly brewed ice tea.

    I didn't have spinach, so I used arugula & green apples; also used quarter cup of walnuts with my favorite dressing. Hubby thought the salmon could have used more seasoning (used salt, pepper, cap of lemon juice), but I thought it was perfect for having atop a salad. Definitely making this again. - 1/19/15

    I use Jazz Apples and squirt a little bit of lemmon juice on the to keep them from browning. This salad is perfectly simple. - 7/17/11
