Whole Grain Jumbo Muffins with Jam filling

Ingredients
*Bob's Red Mill Teff Flour, 1 cup (remove)*Whole Wheat Flour, 1 cup (remove)**Flax Seed, 1 tbsp (remove)Wheat germ, crude, 0.25 cup (remove)Egg substitute, liquid (Egg Beaters), 0.5 cup (remove)Applesauce, unsweetened, 0.33 cup (remove)*Splenda, 24 tsp (remove)Jams and preserves, sugar-free, .5 cup (remove)*Skim Milk, 0.75 cup (remove)Baking Powder, 3 tsp (remove)Salt, 1 tsp (remove)
Directions
Whisk together whole wheat flour, teff flour, splenda, wheat germ, baking powder, salt, and flax seeds in a medium bowl. Beat milk egg substitute, and applesauce in a small bowl until blended then add to flour mixture stirring just enough to moisten. Do not overmix. Spoon into muffin tins until half full and then spoon a little jam into the center of each muffin. Top with remaining batter. Bake @400 for 25 minutes.
