pesto pasta w/tuna

4 cups water*FISH - Mahi Mahi, 12 oz Whole Wheat Spaghetti, cooked (pasta), 4 cup Olive Oil, 1/2 cup Garlic, 2 tsp Thyme, ground, 1 tsp Oregano, ground, 1 tbspParsley, 1 cup Red Ripe Tomatoes, 1 cup, chopped or slicedBasil, 2 tbsp
In small skillet, simmer spices and garlic for 5mins, add in Mahi Mahi fillets, increase heat to med-low and cook mahi mahi thuroughly ( about 8-10 mins)
Removed fish, set heat to low, add tomatoes and let simmer until pasta is done.
Bring water to tolling boil in, add pasta, salt to taste and cook al dente. ( whole wheat pasta takes a little longer, so about 10-15 mins)
Drain and rinse pasta...add the remainder of olive oil mixture to pasta, and toss.

YUMMY!! I keep frozen Tuna steaks (from Costco) in the freezer for quick suppers. I make it the same way all the time and wanted something different. This was delicious. The family also agreed. My husband said he wouldn't mind eating once a week and just alternating the pasta with brown rice. Thank - 3/12/08
