Baked Chicken Tortillas

Ingredients
1 cup bottled salsa, divided 8 oz fat free sour cream 6 (10-inch) flour tortillas 1-1/2 cups chopped cooked chicken breast (about 3/4 pound) 1/3 cup chopped tomato 1/3 cup chopped green or red bell pepper 1/4 cup chopped onion Cooking spray 3/4 cup (3 oz) shredded reduced-fat cheddar cheese
Directions
Preheat oven to 350°.
Combine 1/2 cup salsa and sour cream in a small bowl, and spread evenly over each tortilla.
Divide chicken, tomato, bell pepper, and onion evenly down center of each tortilla, and roll up.
Place rolls, seam sides down, in an 11 x 7-inch baking dish coated with cooking spray.
Top with 1/2 cup salsa.
Bake at 350° for 15 minutes.
Sprinkle with cheese; bake an additional 5 minutes or until cheese melts.

    We loved it. I did modify it a bit. I sauted the onion, Peppers and added bit of garlic in cooking spray until soft. I used leftover turkey instead of chicken. Excellent dinner to use leftovers! - 11/1/10

    Great recipe! I used frozen mixed pepper strips and put the salsa Inside the tortillas, then poured an 8oz can of jalapeno tomato sauce over the rolled tortillas. I am always looking for ways to use leftover chicken. Thanks! - 7/29/09

    Great recipe ! I left off the cheese and substituted the sour cream for nonfat yogurt to save some calories. It tasted fantastic. Next time i'll also try some variations with adding some mushrooms and maybe some garlic. But i love it and it's easy to make. - 6/7/08
