Gail's Lasagne Roll-Ups

Ingredients
18 Lasagne Noodles, Cooked3 Cups Ricotta Cheese4 Cups Mozzarella Cheese, divided (2 X 2)2 Large Eggs1/4 Cup Parmesan Cheese2 Tbsp. Parsley Flakes1 Tbsp. Italian Seasoning6 Cups Spaghetti Sauce3 lbs. Lean Ground BeefSalt & Pepper To Taste
Directions
Bring a large pot of water to a boil & cook lasagne noodles about 10 minutes. In a large bowl combine cheeses, eggs & seasonings, set aside. Brown the hamburger & pour off excess fat. Add the sauce to the beef. Lay each noodle one at a time. Spread about 3 Tbsp. of the cheese mixture on each noodle then roll up. Lay each bundle seam side down into 2 greased 9 X 13-inch pans. Pour prepared sauce over all, cover tightly with aluminum foil & bake at 350 degrees for 30 minutes. Remove from oven & sprinkle on the remaining 2 cups of mozzarella. Return to oven uncovered for 10 minutes or until cheese is completely melted. You can do half at a time. Omit halt the noodles & spaghetti sauce & freeze the cheese mixture.

    Fun to make!Easy! But needs GARLIC. Will use Lawry's Garlic Spread next time. Roll-ups would be great to freeze individually to take to work for lunch! Not super healthy but satisfies my Italian cravings. Kids would LOVE to help roll-up these. - 12/24/07

    Lasagna is one of my favorite dishes and this is an easier, quicker alternative. I made a third of the recipe and used one egg white in place of a whole or portioned egg. I might also cut down on the beef, but otherwise fantastic! Whole family loved it! - 2/5/15

    While this looks good and I might try it, I will make some extreme substitutions - this is really not a healthy dish, though with lowfat cheeses and lean ground turkey, it might not be so bad. - 12/21/07
