Chicken Bacon and Spinach Spaghetti Bolognaise

Olive Oil Spray1 brown onion, chopped2 garlic cloves crushed1 celery stick, finely chopped1 carrot, grated125g short cut bacon, finely chopped500g chicken mince700ml bottle Italian tomato pasta sauce1/2 cup chicken stock75g baby spinach leaves
1 Heat oil in large, saucepan over medium heat. Cook onion, garlic, celery and carrot stirring for 3 minutes or until tender.
2 Add bacon and chicken mince. Cook, stirring with wooden spoon to break up mince, for 5 minutes until chicken is cooked through. Add pasta sauce and stock. Reduce heat to medium-low. Cook covered, stirring occasionally, for 15 minutes. Add spinach. Cook for 1 minutes or until just wilted.
3 Serve with pasta or spaghetti and parmesan cheese.
