Chili Glazed Tofu and Vegetables

Ingredients
tofu- extra firmcarrotsmushroomsasparagusgreen peppergarlicrice wine vinegarsugarsoy sauce- reduced sodiumginger powdergarlic chili paste
Directions
Drain tofu and slice into 6 length-wise slices- salt and pepper and set aside

Chop vegetables- saute garlic and green pepper in a bit of oil, add asparagus, then lay carrots and mushrooms on top. Cover and saute for a while, then mix everything together.

Sauce is easy- whisk all the wet ingredients together with the ginger powder. Once veggies are cooking, pour about half the sauce over the top and let simmer for a while.

Heat another pan with a little bit of oil, brown tofu on both sides (about 3 minutes each). Then add the sauce make sure you move the pieces around so they don't stick. Serve with basmati rice and veggies.
