Edamame Dip

10 oz edamame (fresh or frozen)3 tbs olive oil1.5 tbs garlic1/2 cup water (reserved from cooking edamame)juice of one lime1/4 cup cilantrodash cumindash saltdash black pepper
Cook edamame (if frozen, by instructions, if fresh, boil in a pot of salted water for 3 minutes. Reserve 1/2 cup of the water).
Saute garlic in oil until soft.
Puree garlic, oil, and edamame together. Add 1/2 cup water (or reserved water from cooking edamame) in a slow stream, while food processor is running.
Add lime juice, salt, pepper, cumin, and cilantro. Pulse until blended
Serving Size: make 16 2-tablespoon servies
