Creamy Cauliflower & Chive Soup

Cauliflower, raw, 1 head, large (6-7" dia) (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Vegetable Broth, 6 cup (remove)Garlic, 2 clove (remove)Fresh Chives, 2 tbsp chopped (remove)Basil, 1 tbsp (remove)Salt, .25 tsp (remove)Pepper, black, .25 tsp (remove)
1. Add onion, garlic, olive oil, and sea salt to pot and cook over medium heat for 5-8 minutes until onions become soft.
2. Add vegetable broth and cauliflower florets to onion and bring to a boil; cover and let simmer for 25 minutes until cauliflower is soft.
3. Spoon 1/2 soup mixture into blender and blend on low power for 2-3 minutes until creamy; repeat this step with remaining half of soup until all is blended and soup is creamy without any chunks.
4. Return soup to pot and add chive, basil, and black pepper; continue to season to taste.
5. Serve hot and with a side of your favorite biscuit for dipping!
