Prawn and veggie omelette for 1

Ingredients
2 Egg whites30g Mushrooms sliced15g Onion sliced2tbsp Red pepper sliced60g Prawns/Shrimp

Using a non-stick pan or omelette pan gently fry the mushrooms,pepper and onion,I usually use spring onion for this recipe as its not as overpowering.If you want you can use a 1cal spray to get your veggies started but I usually don't bother. When the veggies look slighty soft add your prawns for another minute.While the prawns are heating through whisk your egg whites in a bowl then add to the prawns and veggies.
When the omlette is almost done which will take only a few minutes put the pan under a hot grill for another minutes to ensure the egg white is cooked on top.
Transfer to a warm plate.

I usually have this with either more veggies on the side or a green salad.
