Almond Crusted Rainbow Trout

1/2 cup whole roasted unsalted almonds1/2 tsp dried dill1/4 tsp smoked paprika1 1/2 to 2 lbs fresh rainbow trout fillets (4 small pieces of 2 larger ones cut in half)1 tbsp olive oilsalt and pepper to taste
Preheat oven to 400 degrees F. Place the almonds in a food processor and run until finely chopped. Add dill and paprika and pulse until blended. Set aside.
Place trout on a parchment lined baking sheet. Brush with olive oil, season with salt and pepper and evenly coat each fillet with almond mixture. Cook for 15 minutes or until fishflakes easily with a fork.
Serving Size: Makes 4 servings
