Baked Steel-Cut (Pinhead) Oatmeal

Ingredients
2 cups steel-cut or pinhead oats2 tsp baking powder1/2 teaspoon salt1 1/2 cup milk2 large eggs1/2 cup unsweetened applesauce 3/4 cup packed brown sugar
Directions
Preheat oven to 350 degrees.
Combine dry ingredients. Mix in milk, eggs, and the applesauce. Pour into 8x8 pan sprayed with cooking oil (Pam). Baked at 350 for 40 minutes or until set.
Serve with yogurt and fruit.

    this is a great recipe. i used 2 chopped apples instead of apple sauce and added a little cinnamon. i also used a 9 x 13 pan and i have breakfast for the whole week!! - 12/8/08
