Ingredients
This is a borrowed recepie I do not claim this as an original. This was posted by Kim327 on the Low Carb Page.1/4 cup of ground flax meal1 tsp baking powder1 or 2 packest splenda1 large egg1 tsp olive oil1 tsp cinnamonNOTE you can use 1 large egg in place of the egg whtes, but it will raise the cholesterol and calories of the muffin.
Directions
Combine dry ingredient and wet ingredients seperatly then combine together whisk very good then put into a bowl sprayed with non stick spray and microwave for 45 seconds.

    I made this a couple of times now. I use 1 1/2 tbs of applesauce instead of the oil and just the egg whites. Sometimes I add some blueberries. It is so moist and filling. One of my favorites! - 4/11/08

    Yummy! Try a sugar-fre syrup (Davinci or Torino) instead of the spenda. Makes it nice and moist. I'm mixing up a week's worth of the dry ingredients so I can just scoop it every day :) - 8/19/07

    I like it like this, I also tried it with cocoa instead of cinnamon, very good..also took out the sweetener and cinnamon and added salt and a little half and half fried it in a 10" nonstick pan, then used it like bread for an egg sandwich. umh good

    I use sour cream instead of butter or olive oil, and use either sugar free coffee flavors or flavored stevia. It may take more than a minute but is great...also make in a cereal bowl, slice and use syrup for pancakes ;-) - 10/22/12

    An awesome recipe that can be manipulated in so many ways! Can be as healthy - or unhealthy - as you please! Either way, it is a great source of fiber and protein. Instead of olive oil, I use 1.5 T unsweetened applesauce for a more muffin-like texture, and 1 T applesauce for bread-like texture. - 5/17/12

    This is a great go-to recipe that I've used over the years, and there are so many ways to enjoy it. I omit the olive oil and sweetner and use 1 egg white. It is absolutely delicious with blueberries or topped off with strawberries and a banana. Yum! - 4/2/12

    I Loved the idea - while trying to omit aspertain from my diet I omitted the sugar / sugar substitute and the cinnamon & went savory. I added rosemary, salt, white pepper, dry mustard, and grated parmesian cheese. nuking on a large plate enables it to be used as a wrap for a sandwich. - 1/23/12

    Wow, this made a fantastic pancake. I forgot the cinnamon and used 1 tsp of SF maple syrup in the batter. I let the batter rest for a couple of minutes and it made one very large pancake. Topped it with more maple syrup. This is so easy and so good!!! - 3/8/10

    I never add oil, but I do add 2 Tbs yogurt, 2 Tbs almond butter, a sprinkle of hemp and chia seeds, and usually cocoa powder instead of ground cinnamon. It's delicious, and filling! I eat half for breakfast one morning, and save the other half to microwave for 1:30 to 2:00 and eat the next morning. - 11/28/20

    This tastes fine and works well for a fast and healthy breakfast. I just used a teaspoon of sugar since I don't usually have artificial sweetener in the house. I may do what some other users have suggested and try adding some raisins or craisins next time. - 1/1/19
