Crock-Pot Veggie Mac & Cheese

Ingredients
3C whole wheat or super pasta1 T soy butter1 10oz bag frozen mixed vegetables2 C nonfat milk3 C low fat shredded cheddar3 T Brewer's Yeast1/8-1/4 tsp nutmeg..less if freshly groundSaltPepper
Directions
Spray slowcooker and turn on low. Cover. Cook pasta according to box. Meanwhile, defrost veggies in microwave. Drain pasta when done & put in slow cooker. Add butter, stir til melted. Add remaining ingredients, salt & pepper to taste. Stir gently. Cook on HIGH 2-3 hrs.
