1 cup long grain brown rice*1 teaspoon Chef Meg's Lower Sodium Seasoning Blend3 shallots, diced2 cups low-sodium vegetable stock* 1 cup dry rice will yield approximately 4 cups cooked
Coat the slow cooker insert with nonstick cooking spray.
Bring vegetable stock to a boil in a small saucepan. Place all the ingredients in the slow cooker, cover and set on low heat. Cook for 2 hours.
Serving Size: Makes 8 1/2-cup servings

i cant wait to try this, i never make brown rice because it takes so long.
if you have a rice cooker- goody for you, some of us cant afford the extra appliance or the extra counter/cabinet space. i already keep my slow cooker on the top shelf in the bedroom. no room up there for a rice cooker too - 9/18/12

I don't know what I did but the first time I did this it had too much water and I ended up cooking on stove. Thought I would try again the same way and it came out perfect; must have been my error first time and glad I decided to try again. Thanks for the tip abt freezing portions of r - 2/18/13
