Lo Carb Faux Zuppa Toscana

1 pat of butter8 oz bulk pork sausage (or Italian sausage if preferred)1/3 cup chopped onion1 clove garlict/2 tsp chili flakes or more as desired2 cups water1 package frozen spinachcooked or frozen cauliflower (I only had about a cup)1 Tbl butter1/4 c heavy cream (or whatever creamer you want)
Brown sausage, onion and garlic with a pat of butter in medium saucepan. Add 2 cups of water or broth if you would like (not included in nutritional information). Bring to boil. Add frozen spinach, cooked or frozen cauliflower, chili flakes and Mrs. Dash. Let simmer for several minutes. Add the other tablespoon of butter and the cream. Allow that to just warm through. Enjoy.

I probably would have used chicken broth if I had had it in the cupboard but just used what I had. Glad that you enjoyed it.
