Roasted Buckwheat Breakfast Cereal

Ingredients
1 cup roasted buckwheat or kasha, rinsed2 tablespoons sliced almonds2 tablespoons flax seeds, ground1 teaspoon cinnamon1/4 teaspoon nutmeg4 dates, pit removed and sliced2 cups skim milk2 cups blueberries--or any fruit
Directions
Preheat the oven to 300 degrees Fahrenheit.
Spread the rinsed buckwheat and almonds on a sheet pan. Toast the almonds while drying out the buckwheat until almonds are light in color, about 5 minutes.
Transfer the almonds and buckwheat to a large mixing bowl. Stir in the flax meal and spices. Add the dates and toss the mixture well. The dates will stick to the mixture, which ensures they won't clump together. Store in closed container for up to 3 weeks.

To prepare cold:
Combine 1/2 cup buckwheat mixture with 1/2 cup cold skim milk. Add 1/2 cup blueberries and eat!

To prepare hot:
Combine 1/2 cup buckwheat mixture with 1/2 cup water and 1/2 cup skim milk in a small saucepan. Bring to a simmer and cook for 10 minutes. Serve with 1/2 cup blueberries.

    Yes, buckwheat is gluten free. It actually isn't related to wheat at all, and in fact, isn't even a grain. It is related to rhubarb, and has zero gluten.

    I had it cold this morning and it was great! Although I did not have blueberries, so I put in a banana - and i had almond milk vs skim. The cereal itself is wonderful, crunchy and the spices pair nicely with it. - 4/30/12

    This breakfast surpasses the recommended amount of carbs in one sitting by a lot. I would say a quarter cup would be an appropriate amount with a piece of fruit. I can't believe SP would recommend that consuming 60 grams of carbs is healthy & in the interest of people who are trying to lose weight - 1/22/13

    I eat plain oatmeal cooked with a cup of chopped fruit (or something small like blueberries) almost every day so I thought I would try this. I liked it cold but did not like the texture when I warmed it up. For the calories, I'll just stick with my oatmeal. - 4/3/12

    Sunkat - a lot of pictures are just stock pictures so the portion pictured may or may not be close to 1/4 cup - however when you compare the size of the bowl to the size of the spoon I would have to say that the bowl and cup pictured must be small. - 2/6/13

    60 carbs per portion! I am allowed no more than 30. I use it as a side dish (3 tbsps) with a little salt and microwave 30 sec with a drop of water. It should be pre-cooked and crispy, then it swells nicely. Don't use fast-boiling, just whole-grain and roasted . - 4/19/12
