Low fat Banana Bread

Ingredients
1-1/4 cups sugar1/2 cup butter2 large eggs1-1/2 cups mashed ripe bananas1/2 cup lowfat buttermilk1 tsp banana extract2-1/2 cups of flour1 tsp baking soda1 tsp salt1 cup chopped nuts (optional) [Not included in the nutritional information]
Directions
Mix sugar and butter in a large bowl.
Stir in egg until well blended, stir in banana, buttermilk and extract until smooth.
Stir in flour, baking soda and salt.
Mix until moistened.
Divide into two bread pans and bake at 350*F in 8� bread pans bake for 1 hour OR 9� bread pans bake for 1 hour 15 minutes or when toothpick comes out clean.
Keep in pan for 10 minutes on wire rack.
Then loosen and remove from pan.
Cool for two hours on wire rack.

    This looks like standard banana bread recipe. I use brown sugar instead of white sugar. Whole wheat flour instead of white flour, skim milk instead of buttermilk and I add applesauce to moisten. The loaf doesn't last too long in my house! - 2/5/09

    This looks like a standard banana bread recipe. I'm sure it's delicious but if you want a low fat version, I recommend substituting apple sauce or yogurt for part or all of the butter. If you use apple sauce, decrease the sugar a bit. - 2/5/09

    This is the same recipe I use all the time, and it's definitely not low fat. I've always modified it and added some vanilla (not banana flavoring), and divided the sugar using 1/2 the amount granulated, and 1/2 brown sugar. Super yummy! Not lowfat. - 2/5/09

    This IS a good recipe. I put extra banana and it was very moist and yummy. However, it's definitely not lowfat. And it's impossible to get 24 servings out of this recipe, so a decent serving size it actually about 2 or 2.5 of the recommended serving sizes, which is close to 300 cals or more. - 12/23/08

    This is a great recipe. It doesn't taste low fat. I used half brown sugar and half white sugar but other than that I followed the recipe exactly. I didn't add nuts because I wanted to keep the calories on the lower side. - 12/28/07

    I don't consider 4.3 grams LO FAT! Reading through comments here, I would use egg substitute, brown sugar splenda with regular splenda, NO butter, just the bananas and some applesauce. SKIM milk. I have not calculated it, but with 1/2 the nuts, I know it would be far more reasonable for dieting! - 10/30/09

    any banana bread is yummy-a little tip on cutting out the fat-replace the butter with an equal amount of applesauce and then take out that same amount of liquid.If the recipe does not call for any liquid,you can remove some of the egg(s)This works in most recipes except for cookies - 5/2/09

    I made a bunch of substitutions, including making muffins instead of bread, but they're amazing! I substituted 1 1/2 c. of w.w. pastry flour for the regular flour, used soymilk made into buttermilk by adding lemon juice, vanilla instead of banana ex. and used a muffin pan.     I am amazed by how good this bread is!!! I made it a little different by adding pecan nuts and pouring the mixture into a bundt cake pan and cook it for 45 minutes. Absolutely fantastic!!! - 8/20/07

    standard serving size for a loaf pan is 12 servings. i agree with the other posts that 24 servings from one loaf is ridiculous. that puts your calorie count closer to 240 calories per serving.

    i would suggest reducing the sugar to 1 cup (plenty sweet) and ommitting the buttermilk altogether. - 10/30/09

    You say this is low fat? I don't think so. My recipe has 1/4 c fat (margarine), yogurt (to make up for the fat) and 1 egg, 1 egg white! - 10/30/09

    I haven't made this, but at the ingredients that the nutritional info was based on differ from the recipe you follow to make this bread. I wouldn't make this, as just substituting applesauce for butter or shortening & using oat flour in a standard recipe makes a great banana bread. - 2/5/09
