Tangy, Creamy Balsamic Vinaigrette

Ingredients
1/2 cup balsamic vinegar1/4 cup tahini 1 tablespoon low-sodium soy sauce 3 cloves garlic 1 teaspoon ground black pepper 1/4 cup waterhandful fresh parsley or 1 sprig fresh rosemary, leaves only (optional)
Directions
Place all ingredients in a blender or Magic Bullet and process until smooth. Add more water if needed to thin the dressing. Refrigerate for up to a week.

    For those concerned with salt, you might want to try Bragg's Liquid Aminos as a sub for the soy sauce. It is a natural soy alternative. It is a vegetable protien from soy beans. It tastes like soy without all the salt, only 160mg. We love it around here and can be used in any recipe. - 9/21/12

    To JANTO2, who states that Bragg's Liquid Aminos is better than soy sauce, if you compare it to light/low sodium soy sauce, you'll actually find that Bragg's is *very* high in sodium!!! Low sodium soy is the better alternative if you're concerned about your sodium! - 12/15/12

    This was GREAT on portabella sandwiches!
    They tasted just as good as restaurant sandwiches, at 1/2 to 1/3 the calories!

    Also, the fact that the dressing was thicker helped it stay "in the sandwich", rather than making a mess. - 7/17/12

    I tried this tonight on a salad with fresh spinach, romaine, strawberries, pineapple, cucumber, and onion. It was fantastic. The flavors combined very well. It would also be good with some feta and maybe pecans or almonds. Also, I had no tahini, but found a nice substitute through google. Thanks! - 4/7/12

    OMG! So good. I used a little less balsamic and put in a little rice vinegar instead. Did not have tahini on hand so I put raw sesame seeds in my Vitamix and also just a drop or so of toasted sesame oil. I also put about 2 TB of some spicy hummus that I had on hand. I can tell I will make this often - 1/10/13

    This only has 1 Tbl soy sauce in a cup of dressing, 89mg of sodium per 2 Tbl serving. Is that a worrisome amount? I wouldn't know; I don't track mine as it's not an issue for me. - 4/19/13

    I thought this recipe was great. I didn't use parsley in mine and thought it tasted really nice. It is quite strong so if you don't like strong flavours, it may not be for you. I, on the other hand, like really strong balsamics and such so I really liked it! - 4/6/13

    Ha. I was going to suggest Bragg's Liquid Aminos. Great sub for soy sauce. This looks great, no time to make tonight but saving the recipe. Think I will try with red wine vinegar also for a different taste. BTW, I can get tanini in the middle eastern section of Wal-Mart or the local grocery. - 4/3/13
