Chicken with Artichokes and Roasted Red Peppers

3 Chicken Breasts, cooked on the Foreman Grill seasoned with salt, pepper and garlic1/2 Cup chopped onions3 tsp chopped garlic1 Cup Chicken broth/bullion1 can artichokes (quartered)1/2 jar Fire Roasted Red Peppers, sliced1 cup tomatoes quartered (if using grape, cherry or campari)1/2 tsp crushed red peppers2 tbsp flour disolved into tap water for sauce thickening
Season 3 chicken breasts with salt, pepper and garlic and set to cook on the George Foreman Grill.
In large skillet (sprayed with PAM) over medium/medium high heat, add onions and garlic. Once the onions are clear, add Chicken broth and let it reduce a bit. After about 5 minutes add quartered artichokes and roasted red peppers. Remove Chicken from the Foreman grill and slice into strips. Add to skillet. Add tomatoes and crushed red peppers and allow to simmer for 5 minutes. If sauce is too runny add flour and water mixture to thicken. We served ours over cous cous!

This dish is so quick and easy, not to mention very tasty! I didn't use the Forman, instead I just cooked the onions and garlic and then added the chicken strips. After the chicken was cooked I added the stock and then let it simmer, added cornstarch and also served over couscous! Thanks 4 sharing! - 9/12/08

Delish! I made this dish skeptically because I didn't think my boyfriend would like it. (he dislikes most healthy items) but instead he loved it and went for seconds. I save a little for lunch tomorrow! I will be making this again and again. I might try it with asparagus instead of the artichokes - 1/22/08
