Energy Bites - No bake!

Ingredients
1C coconut, toasted1C rolled oats (can use use gluten-free oats)1C peanut butter1/2C pecan pieces (or other nut)1/2C mini chocolate chips (optional. if not using, use 1 full cup nuts to replace the volume in the recipe)1C honey1C ground flax seed1tsp vanilla
Directions
Toast the coconut and let cool. Mix all dry ingredients together, pour on the honey and stir to mix. Make sure you get the oats etc. hiding in the bottom of the bowl incorporated. Let sit in fridge for 30 minutes to stiffen up. Scoop with mini-ice cream scoop or teaspoon into your hand and squeeze into a ball (they don't really roll so well). You can put them out to eat now or into a container in the fridge. You don't have to roll them into a cookie sheet or anything because they won't lose their shape.
