Beef tamale casserole

Ingredients
1.25 C. cornmeal3/4 C. white flour1 tbsp baking powder3 tsp vinegar1.5 C. skin milk2 egg whites1 C. fresh corn0.5 C. green bell pepper0.5 C. red bell pepper1 C. zucchini squash0.5# 96% lean ground beef1/2 C. shredded low fat cheddar12oz can tomato sauce1 tbsp cumin1 tbsp chili powder1 tbsp onion diced1 tbsp garlicTop w/ 1 C. diced tomatoes, 1 C. shredded lettuce, 1 diced jalapeno
Directions
Mix cornmeal, flour, baking powder together. Mix skim milk and vinegar and let set for 5 min to make buttermilk. Add to cornmeal/flour mixture. Add corn. Placed in a sprayed 9 X 12 casserole dish and bake for ~ 20 min on 350. Brown hamgburger meat, peppers and squash. Place on top of cornbread when done baking. Saute onion, garlic, cumin and chili powder and mix w/ tomato sauce. When thickened pour on top of beef/cornbread mixture. Top w/ Cheese. Bake for ~ 5 more min. Then top w/ lettuce, tomatoes and jalapeno.
