Tomato, Basil, Brown Rice Soup

2x28oz cans of organic, diced tomatoes2cups organic vegetable broth1Tbsp extra virgin olive oil1 medium onion, chopped2 cloves crushed garlicBasil, fresh, chopped1/4tsp freshly ground pepper1/4tsp salt1cup organic coconut milk1.5cups (cooked) brown rice
Saute onion & garlic in olive oil. Add to tomatoes & broth in slow cooker. Turn cooker on Warm (lowest setting). Let warm for 4hrs. Add chopped basil & let simmer until basil is well wilted. Blend soup IN cooker with immersion blender. Add coconut milk & cooked rice, stir. Let warm for approx 10 minutes. Serve.
