Bercy's Shrimp Creole

3 lbs of raw shrimp cleaned and devined2 cans of 6 oz tomato paste1 cup of chopped onions1 cup of chopped bell pepper2 cloves of garlic chopped1 bunch of scallions chopped1 cup of dry parsely1 cup of lemon juice1 tbsp of thyme4 leaves of bay leaf1 tbsp of regular salt or creole seasoning1 tbsp on black pepper
Serves 10
Add 1 tablespoon of olive oil to a 8 quart pot and allow it to heat.
Add onions, bell peppers, garlic, scallions and dry parsely
Saute seasonings until they become soft
Add 2 cans of tomato paste and saute for 15 minutes.
Add 8 cups of water and let it simmer for 15 minutes.
Add ground thyme, bay leaf, salt or creole seasoning and black pepper.
Simmer for 20 minutes on medium heat
Add shrimp and lemon juice and cook for 15 more minutes.
Serve over brown rice or wheat spaghetti
