Maple Pecan Almond Granola

Oats, 8 cupSalt, 1.5 tspCinnamon, ground, 2 tspMaple Syrup, .75 cupOlive Oil, .75 cupVanilla Extract, 2 tspPecans, 1 cup, choppedAlmonds, 1 cup, sliced
Preheat oven to 350.
Mix oats, salt and cinnamon in a large bowl.
Heat maple syrup, olive oil and vanilla.
Pour over oat mixture and mix thoroughly.
Bake in jelly roll pans for 30 minutes, stirring the mixture about half way through.
Add nuts for last 15 minutes.
Enjoy!
Serving Size: Makes a giant bowl of granola, About 2 quarts.
