Ingredients
2 pork & apple sausages cut in half lengthways,1 diced cooked potato (left over from night before)1 small can baked beans6 mini roma tomatoes cut in half2 eggsCan add mushrooms, capsicum etc but run out.
Directions
Cooked this in my tagine on top of the stove, lid acted as oven and cooked the eggs perfectly. Cut sausages in half lenthwise, brown bothsides till crispy , add diced potato, cook till crispy, add baked beans, tomatoes, cook together for 5 =6 minutes then crack eggs over top. Put lid on and cook till eggs done, but still gooey.
Serve with toasted sourdough bread and save a peice for mopping..
