Quick Gluten-Free Bread

Ingredients
3 cups oat flour1 Tbsp baking powder1 Tbsp sugar1-1/2 cups club soda1 Tbsp caraway seed or flaxseed
Directions
Preheat oven to 375 degrees.
Spray 8-1/2" x 4" x 2" bread pan with non-stick cooking spray.
Combine oat bran flour with baking powder, seeds and sugar.
Combine club soda with flour mix until flour is just moistened.
Pour batter into bread pan.
Bake for 1 hour. Makes one loaf.

    This is just a simple quick bread. I love it for breakfast with a little jam or fruit butter.

    Also, oats + food processor = flour

    By the way, oats are in fact gluten-free, but are often contaminated with wheat. Certified gluten-free oats exist. Though some celiacs are aggravated by oat protein - 3/15/10

    it is true it did not rise much but it is not very crumbly. you will definitely not find it like a normal bread. it is a dense bread. i loved the taste of it with a slice of cheese or you could even try your favorite jam. what i liked was that it is very easy to assemble and make. - 5/29/07

    Oats are not necessarily off limits. Get certified GF oats. You can order from Erem Hill Estates.

    People should know before making this bread that the common oat is NOT gluten free. If you can find the certified oats, it may may ok. But please beware of the oats you find in the local markets and health food stores. - 2/5/08
