Broiled White Fish Parmesan

3 oz Cod (or your choice of white fish)1/4 cup grated Parmesan cheese2 tablespoons light margarine, softened1 tablespoon plus 1 1/2 teaspoons mayonnaise1 tablespoon lemon juice1/8 teaspoon dried basil1/8 teaspoon ground black pepper1/8 teaspoon onion powder1/8 teaspoon garlic salt
Makes four 4-oz. servings
1. Preheat your oven's broiler (Hi setting). Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder, and garlic salt. Mix well and set aside.
3. Arrange fillets in a single layer on the pan. Broil a few inches from the heat for 2-3 minutes. Turn fillets over and broil for 2-3 minutes longer. Remove the fillets from the oven and cover them with the Parmesan mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. DON'T OVERCOOK!

This may sound a strange combination but I wanted something to give brussels sprouts a little zing so decided to try one portion of left over parmesan mixture on them. I am so glad I did, it made the brussels sprouts taste wonderful, light and fresh and delicious. Definitely going to do this again! - 5/11/10

This is a keeper! I used this on lake-caught white bass, and it was the best fish I've had all year. I didn't use the margarine, just light mayonnaise, lemon juice, pizza seasoning and Parmigiano. I'm not much of a fish fan. I've only cooked it a few times in my life. When I saw this recipe and the excellent reviews I decided to give it a try. It was "okay" but it didn't make me a fan of fish. I wanted to love it but I didn't think it was anything spectacular. I used fresh tilapia. - 9/29/12
