1 qt chicken broth1/2 tsp saffron2 tsp salt1/2 tsp pepper6 tb olive oil1 lb chorizo or andouille chicken sausage2 lbs chicken parts or diced chicken meat1 large onion3 garlic cloves2 cups rice1 28-oz can peeled tomatoes2 cups peas2 cans chopped clams1 lb jumbo shrimp
350 oven. Heat broth and seasonings to simmer. Meanshile brown sausage in 1 tb oil and set aside. Brown chicken in 1 tb oil and set aside. Chop onions and garlic, combine onions, garlic, rice and remaining 4 tb oil and fry about 5 minutes; don't burn the onions. Drain and chop tomatoes. Combine all ingredients except seafood in casserole, cover and bake 1 hour. Stir in seafood, cover and bake until done (15-30 minutes).
