Fava Bean Soup from Dried Fava Beans

Ingredients
2 cups dried fava beans, skins peeled2 cups low sodium chicken broth or vegetable broth4 cups water1/2 tsp salt2 tsp ground black pepper1 T crushed red pepper flakes
Directions
1. Soak the fava beans in water 8 hours (overnight). Drain and rinse the fava beans after soaking.
2. In a pressure cooker, add the fava beans, water, and chicken broth and cook for 30 minutes. Beans will have dissolved.
3. Let the beans cool and then scrape off the top liquid. It will be a little bit gelatinous. Maybe someone can explain to me what this is. Add the beans to a different pot, and add the pepper, salt, and red pepper. Reheat for a few minutes, stirring occasionally.
5. Season to taste and serve.
