Thai Green Curry (Chicken)

Ingredients
2 Chicken Breasts, sliced1 Onion, chopped1 Can Light Coconut Milk1 Can Green Curry Paste (we like Aroy-D)1 Cup sliced water chestnuts1 tbsp Fish Sauce1 tbsp Palm Sugar
Directions
Fry the onion until soft then add the chicken breast and cook until just brown.

Add the rest of the ingredients and simmer until the chicken is cooked through

Garnish with juliened Kaffir Lime Leaves and Thai Basil

    Fry onion in 3 tbsp olive oil, add 2 crushed kaffir lime leaves & curry paste & 6 tbsp coconut milk, cook for 2-3 minutes, THEN add chicken & cook, add rest of coconut milk & simmer. Add fish sauce to season after chicken is cooked. Find Kaffir lime leaves in produce section of Asian Mkts. - 9/9/12
