Ingredients

Directions
Combine sweet potatoes, carrots, cauliflower, onion, garlic, corn, tomatoes and garbanzo beans in large pot and sauté with olive oil until sweet potatoes and carrots begin to soften. Season vegetables with curry powder, cumin, turmeric, ginger, salt and pepper while sauteeing. Add coconut milk and vegetable broth and cook until all vegetables are soft.
