SALMON CAKES

Ingredients
Directions
Canned salmon (large can, 14.75 oz)1/2 cup onion1/2 cup mushrooms1 oz SunChips or other multi grain chip1 fresh egg1/4 cup or less chicken brothDash of saltDash of pepperOil for frying
Flake salmon into bowl.
Chop/dice onions, add to salmon.
Chop/dice mushrooms, add to salmon.
Crush chips into fine crumbs, add to salmon.
Beat egg, add to salmon.
Add salt and ppper
Use a little chicken broth or water to moisten and combine all ingredients. Shape into 6 patties and pan fry in oil. Brown on both sides.
Serving Size: Makes 6 salmon cakes (1 cake = 1 serving)
