Chocolate Energy Squares

2 cups pitted dates1.25 cups almonds1.25 cups walnuts or pecans1/2 cup unsweetened shredded coconut2/3 cup unsweetened cocoa powderPinch salt2 tablespoons vanilla extract2-3 tablespoons water
Spray a 8x8 square pan with cook spray. In a food processor, process the nuts and dates until they are in fine pieces. Add coconut, salt, cocoa and process until it resembles a fine gravel. Add vanilla and 2 Tbsp of water and process long enough for it to clump together. If needed, add last Tbsp water to make it moist enough to press out into pan. Press into pan with the back of spatula until its packed very tightly. Chill for at least 30 minutes and then cut into 12 even squares. Wrap individually in Saran Wrap for snacks or dessert.
