Ingredients:2 Cups Leeks4 Garlic Cloves1 Head Bok Choy2 Cups Chicken Stock8 Oz. Haddock1/2 Cup Fresh Cilantro2 Tablespoons Red Curry Powder1 Tablespoon Olive Oil1 Tablespoon Orange ZestS&P to taste
1.) Brown the Leeks in Oil. Add the Garlic and Curry Powder and sautee for another 2 minutes.
2.) Add the Bok Choy and the Chicken Stock and simmer for about 5 minutes.
3.) Rinse the fish and pat dry. Season the fillet with salt and pepper and the orange zest.
4.) Add the Orange Juice and lay the fish over the Bok Choy. Cover and steam for another 5 minutes or until the fish is flaky and cooked through.
5.) Serve in bowls topped with fresh Cilantro.
