Steamed SalmonBrown RiceEgg WhitesDijon MustardBroccoliBell PepperOnionGarlic S&PLemons (juiced)Greek Yogurt
Cook Rice according to instructions put in mixing bowl
Poach salmon and flake apart in mixing bowl with the rice. Lightly sweat the broccoli florets, peppers, onion and garlic until tender, add to bowl. Mix together add dijon mustard and egg whites (be careful to mix quickly so the eggs don't cook) add S&P if desired. Mix the lemon juice and yogurt together separately and drizzle over the top before baking. Bake for 25-30 minutes or until light brown.
Serving Size: makes 1 loaf cut into 6 slices
