Low Fat Yogurt Pancakes

Ingredients
2 Cups unbleached all purpose flour2 Tsp baking powder1/2 Tsp baking soda3 Tbsp sugar1/3 Cup plain low fat yogurt2 eggs1 Tbsp canola oil1 Tbsp pure vanilla extract1 2/3 Cup skim milk
Directions
In a large mixing bowl combine dry ingredients and whisk to combine. In a large measuring cup combine all wet ingredients and whisk well to blend. Dump wet into dry and gently stir until a thoroughly moistened lumpy batter results (about a dozen turns of the whisk). With a wad of paper toweling spread a tablespoon of vegetable oil onto pre heated griddle. Use full quarter cup to measure pancakes onto a griddle and use back of ladle to spread into a 4 inch cake. Cook until deep golden on both sides. Makes 12 four inch pancakes.
