Biggest Loser Egg White Bites

Ingredients
1 zucchini1 Carrot1 summer squash1/2 medium onion1 bell pepper 2 Cups of spinach chopped 1/4 cup of mozzarella 1 tbsp of salt1 tbsp of chili powder1 tbsp of black pepper18 egg whites
Directions
Preheat oven to 325
Chop veggies finely sautee in a skillet until tender
While veggies are cooking, seperate eggs and add in chili powder salt black pepper to egg whites
After veggies are tender spray a cupcake pan with cooking spray.
Then place some veggies in the bottom of the cupcake pans .
Then scoop some of the egg whites in the cupcake tin, filling the tin 3/4ths full
Sprinkle a small amount of cheese over each cupcake tin.
Bake for 30 mins, let cool then eat
