Stuffed Mushrooms with Ground Veal

Ingredients
30 mushrooms1/4 cup chicken broth1 tbsp sherry1 tbsp butter1 tsp canola oil1/2 lb ground veal1 tbsp shallot2 tbsp soy sauce2 tbsp butter
Directions
In a saucepan combined chicken broth, sherry and 1 tbsp of butter.
Add mushrooms, simmer for three minutes.
Remove caps, drain and cool on paper towels.
Keep the juice aside.
Heat oil and add ground veal.
Cook until well done.
Remove from heat.
Add shallots, soy sauce, two tbsp melted butter and two tbsp of reserved juice.
Stuff each mushroom cap with mixture.
Place in a shallow oven proof dish.
Bake at 375*F for 20 min.
Serve warm.

    My husband loved the taste of the mushrooms...so did I, however I found them a pain to make. Perhaps it was my mood today. The veal kept hopping out of the mushrooms.....I had little patience for it. Although, I would make them again. A recipe I might make 3-4 times a year. - 7/19/08

    I will try it, but will probably switch to ground turkey or lean beef - will omit the butter and find an alternate, maybe margarine or oil. Someone said it was bland, add a little garlic or onion - fresh or powder - to spice it up a little.... - 8/1/11
