Flounder Florentine

1 lb flounder fillets 15 oz Fat-free Ricotta Cheese10 oz (One package) Frozen spinach3/4 cup shredded part-skim mozzarella cheese1/4 cup grated Parmesan cheese
Cook frozen spinach as directed; drain off water. Mix together ricotta, mozzarella, and Parmesan cheeses. Add cooked spinach to cheese mixture and mix well.
Place a scoop of cheese/spinach mixture(~2 Tbs, depending on fillet size) in the middle of each fillet, and fold ends over to form a roll. Place rolls in a baking dish, and cover with foil.
Bake at 350F for 20 minutes. Uncover, and broil 5 minutes to brown top.
Serves 4.
