Ingredients
FISH - Mahi Mahi, 16 ozA Taste of Thai - LIte Coconut Milk - WHOLE can (398 ml)Bird's Eye Broccoli Florets, 4 cupbaby carrots, 16 ozGreen Curry Paste, Thai Kitchen, 1.33 tbspSunflower Oil, .25 cup
Directions
Heat oil in wok heating on high. Add curry paste. Stir for 3 minutes.
Add coconut milk. When it comes to a boil, add the carrots, then the broccoli. Cover and simmer on medium for 10 minutes.
Add fish (layer on top). Lower to barely simmer for 10-12 minutes, turning fillets/chunks over 1/2-way through.
