30 Minute Crawfish or Shrimp Etouffee

Ingredients
Ingredients:Onions, raw, 1 cup, choppedGreen Peppers (bell peppers), 1 cup, chopped Olive Oil, 2 tbsp Low Fat Cream of Mushroom Soup, 2 cup (8 fl oz) Shrimp or Crawfish tail meat, cooked, 6 oz Salsa, 1 cup *Brown Rice, long grain, 1 cup
Directions
Heat non stick pot
Once semi warm pour in
olive oil, green pepper, and onion
stir fry until lightly cooked
On top of vegetables, pour
in cream of mushroom soup
Heat on medium to liquify soup
Once liquified turn down heat
to low-medium. Pour in salsa
and stir together. Drop in
shrimp or crawfish and cook on low for
about 20 minutes, stiring
occasionally. Season to taste
after 20 minutes with pepper &
red pepper or premixed cajun seasoning

Pour over rice
or eat alone as soup.

For a spicier version substitute hot salsa
