Ingredients
Crisp Cucumber Salsa:I doubled it, my changes in ( ) 2 cups finely chopped seeded peeled cucumber (4 cups or 3 large seedless cucumbers)1/2 cup finely chopped seeded tomato (1 cup or 2 Medium tomatoes)1/4 cup chopped red onion (1/2 cup)2 Tbsp minced fresh parsley (1/4 cup)1 jalapeno pepper, seeded and chopped (I used 1/2 of a VERY large jalapeno)4-1/2 tsp minced fresh cilantro (1/2 cup minced cilantro)1 garlic clove, minced or pressed (2 cloves in the press)1/4 c reduced-fat sour cream ( 1/2 cup fat free sour cream[25 cal= 2tbsp]) 1-1/2 tsp lemon juice (3 tsp)1-1/2 tsp lime juice (3 tsp)1/4 tsp ground cumin (1/2 tsp)1/4 tsp seasoned salt (1/2 tsp)Tortilla chips I bought Baked Tostitos Scoops. In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat.
