Chocolate Pudding

Ingredients
1/3 cup White Sugar3 T. Corn Starch1/4 cup Cocoa Powder1/8 t. Salt2 cups Skim Milk (nonfat)
Directions
1. Mix the first 4 ingredients in a medium microwave-safe bowl. Blend in milk.

2. Microwave on high, uncovered, for 3 minutes. Stir.

3. Microwave for an additional 4-6 minutes, stirring again about halfway through, until pudding is thick.

4. When pudding has thickened, place in a sink filled with cold water. (You may want to place ice cubes in the water to cool it off even more. Continue stirring until the pudding is just slightly warm.

5. Place plastic wrap on the surface of the pudding, and refridgerate for 30 minutes or until cooled completely. Enjoy!

(NOTE: Do NOT skip the cooling stage, or your pudding will form a skin on top, and will become chunky, not smooth.)

    I decreased the sugar and use fat free milk and it's still delicious! This is so helpful in satisfying my sweet tooth, and is worlds better then the chemical aftertaste of the jello instant pudding I was using.
