3 C Spelt Flour1 Teaspoon salt1 Teaspoon baking soda3 Eggs1 C Coconut Oil2 C Coconut Sugar2 C unpeeled, raw zucchini, grated1 C Chopped Nuts (optional)
Sift together flour, salt and soda. In another bowl, beat eggs. Add oil, vanilla, sugar and zucchini. Mix well. Stir in flour mixture. Fold in nuts. Pour into paper lined cupcake pan. Bake at 350 degrees for 30 minutes. Remove from pans and cool on racks.
